Moist Oatmeal Cookies
- Add to the creamed mixture:
- 1 Tsp. Vanilla
- 3 eggs
- 1 1/2 cup raisins. Combine these first 3 ingredients and let the raisins sit in the egg/vanilla mixture for at least an hour. (The soaking of the raisins is what make the cookies so moist)
- Cream together the following: 1 Cup butter, 1 Cup brown sugar, 1 Cup white sugar.
- 2 1/2 cups flour
- 2 tsps. soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 Cups oatmeal (old fashioned)
- Egg and raisin mixture.
Mix all together and drop spoonfuls on cookie sheet (I spray sheet with Pam even though lots of butter in cookies) and bake at 350. Check cookies at 9 minutes. Remove onto rack.
This recipe also halves easily. (They're GOOD!)
