Ingredients
- 4 boneless chicken cutlets ( about 1 pound)
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1 tbsp olive oil
- 1/4 cup minced shallots
- 1/2 cup chicken broth or stock
- 3 tbsp balsamic vinegar
- 1 tsp brown sugar
- 1 tbsp butter
- 1 cup orzo, cooked
- 2 tbsp minced fresh parsley
Preparation
Step 1
1. Place chicken between 2 sheets of waxed paper. Pund 1/2 inch thick with mallet or roliing pin( or use thinly cut boneless chicken Cutlets). Sprinkle chicken salt and pepper.
2. Heat oil in a large nonstick skillet over medium high heat. Cook Chicken 4-6 minutes per side til golden brown and cooked. Transfer to serving plate, cover and keep warm
3.Add shallots to skillet and cook stirring , 2 minutes. Add broth, vinegar and brwon sugar. Bring to a boil;cook until reduced by one third, about 4 minutes. Whisk butter into skillet til melted. Pour over chicken. Toss orzo with parsley and serve with Chicken
NOTE; Sauteed broccoli works well with this dinner
