Ingredients
- 1 1/2-2 cups cooked chicken, diced
- 1/2 cup chopped onion
- 10 oz. shredded cheddar or fiesta cheese
- 2 cans cream of mushroom soup
- 1 can green chile enchilada sauce
- 1 (8 oz) carton sour cream
- chopped jalapenos, to taste
- flour tortillas
Preparation
Step 1
Mix chicken, onion and all but 1 cup cheese. Place a handful of mixture in each tortilla and roll up. Mix soup, green sauce, sour cream and jalapenos. Pour 1 cup into 9x13" baking dish. Arrange enchiladas in pan and pour remaining sauce over all. Bake at 350 degrees for 35 minutes. Sprinkle with remaining cheese and bake 15 minutes more.
