Ingredients
- 4 cooked and shredded chicken breasts
- 5 cups of chicken broth
- 1 chopped poblano pepper seeded
- 4 diced roma tomatoes
- 3 stalks of celery chopped
- 1 bay leaf
- 1 large yellow onion chopped
- 5 cloves of minced garlic
- 1 or 2 chopped bell peppers
- 2 tablespoons cumin
- 1 1/2 tablespoons chili powder
- 1 teaspoon oregano
- a dash of garlic and onion powder
- Salt and pepper to taste
- a bunch of cilantro minced (big handful stalks and all)
- served with corn tortillas (cut in fourths)
- sliced avocado
- a pinch of cheese

Step 1
Despite having a lot of ingredients, it is really easy to make this soup. Just mix everything together. First just bring the broth and chicken to a boil and turn down the heat and add as you go. Considering the quanity of ingredients how much broth you need may vary. Enjoy!
