Sweet Potato Dip

  • 1 1/2 cup(s) canned chickpeas, loose skins removed, washed, drained
  • 1 cup(s) cooked sweet potato, mashed*
  • 1/4 cup(s) packed light brown sugar
  • 1/2 cup(s) fresh orange juice
  • 1 tsp orange zest, finely minced
  • 1 tsp ginger root, fresh, finely minced

Step 1

Combine all ingredients in a food processor or blender; blend until smooth. Allow to set up in refrigerator for about 30 minutes. Yields about 2 tablespoons plus 2 teaspoons per serving.

*If you roast the sweet potato, you’ll bring out its natural sweetness. But you can steam, boil, or microwave the potato before you mash it, if you prefer
