Coffee Cake Mix

[Heads up: This is a two step recipe - one part the gifter completes, the other part the gifted completes after receipt of the gift].

INCOMPLETE: How much fruit does one add?

Ingredients

• Gifter:
• 3 cups flour
• 2 cups sugar
• 1 tablespoon baking powder
• 1 teaspoon salt
• 1-2 teaspoons of an extract of your choice, such as lemon, almond or vanilla
• Gifted:
• 1/2 cup orange juice
• 1 cup vegetable oil
• 4 eggs

Preparation

Step 1

Combine the ingredients above [Gifter gives] in a jar or other attractive container. Attach a note that reads:

To the coffee cake mix, add 1/2 cup orange juice, 1 cup vegetable oil and 4 eggs. [Gifted completes].

Grease a Bundt cake pan and pour half of the batter into the pan.

Then, place fruit of your choice, such as canned apricots, lemon filling, fresh berries or chopped apples, on top of first layer of batter.

Then pour the remaining batter on top, and bake at 350 degrees for one hour.
