Pull off tough outer leaves on stem and bottom Use a sharp knife to cut off the artichopkes top third. Use kitchen shears to snip off any small, sharp thorns on ends of remaining leaves. Cut off the very bottom of stems, peel stem. Place articoke in a bowl of cold water mixed with 1 Tbsp of fresh lemon juice while you finish any remaining artichokes. Boil or steam for 30 to 40 min. or microwave (in a covered bowl with a bit of water and lemon juice) for 6 to 7 min for 1 (about 2 min longr for 2) When stem is tender when peirced, remove from heat. Serve with melted butter, vinaigrette or a mayonaise-based sauce for dipping leaves.
