Spring Green Avocado Salad

Ingredients

  • 1 or 2 avocados, peeled and sliced
  • 3 - 4 cups mixed salad greens
  • 2 green onions, sliced
  • 1 cucumber, peeled and sliced
  • 1/4 cup crumbled feta or blue cheese
  • Vinaigrette, ready made or use recipe included
  • Coarse-ground black pepper

Preparation

Step 1

1. Combine avocado, salad greens, green onions & cucumber in a small bowl.
2. Serve salad portions on salad plates. Sprinkle with feta or blue cheese over each serving.
3. Drizzle vinaigrette over salad and top with a dash of black pepper.

Vinaigrette:

1/2 cup extra virgin olive oil
2 tbls apple cider vinegar or Steen's cane vinegar
1 lemon, juiced
2 tsps spicy Dijon mustard
2 cloves garlic, crushed or minced
Salt & black pepper, to taste

in a small bowl, combine oil, vinegar, lemon juice, mustard, garlic, salt & pepper. Whisk vigorously to combine. Refrigerate left over vinaigrette.
