Beef & Zucchini Quiche

The addition off ground beef in this zucchini quiche recipe adds a wonderful and hearty layer of flavor. Perfect for breakfast or brunch but it's so good and fulfilling I could eat this for lunch or dinner too!
Ingredients
- 1 unbaked 9-inch pie shell
- 1/2 pound lean ground beef
- 1 medium zucchini, shredded
- 3 greens onions, sliced
- 1/4 cup mushrooms, sliced
- 1 tablespoon all-purpose flour
- 3 eggs, beaten
- 3/4 cup (3-ounces) Swiss cheese, shredded
- 1 1/2 teaspoons fresh thyme or 1/2 teaspoon dried thyme leaves, chopped
- 1/2 teaspoon salt
- Dash black pepper
- Dash ground red pepper

Step 1
Preheat oven to 475°F.
Line pie shell with foil; fill with dried beans or rice. Bake 8 minutes. Remove from oven; carefully remove foil and beans. Return pie shell to oven and bake for 4 more minutes; set aside.
Reduce over to 375°F.
Brown ground beef in medium skillet. Drain. Add zucchini, onions, mushrooms; cook, stirring occasionally, until vegetables are tender.
Stir in flour; cook 2 minutes, stirring constantly. Remove from heat.
Combine eggs, milk, cheeses and seasonings in medium bowl. Stir into ground beef mixture; pour into crust.
Bake 35 minutes or until knife inserted near center comes out clean.
