Sirloin and Summer Veggie Kebabs with Chimichurri

Ingredients

  • 1 lbs beef sirloin tips (cut into 1.5 inch pieces)
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1/4 tsp black pepper
  • wooden skewers
  • 1 zucchini
  • 1 yellow squash
  • 1 onion
  • 1/2 cup chopped flat leaf parsley
  • 1/2 cup chopped fresh oregano
  • 2 garlic cloves, minced
  • 1/4 cup olive oil
  • 2 tsp balsamic vinegar
  • 2 tsp lemon juice
  • 3/4 tsp salt

Preparation

Step 1

Marinate beef tips in balsamic vinegar, soy sauce, and pepper in a shallow dish for 30 minutes. Soak 4 wooden skewers in water.
Slice zucchini and squash into rounds. Cut onion into wedges.
Heat grill to medium-high, thread beef and veggies onto skewers alternately. Grill for 7-8 minutes per side.
Whisk together parsley, oregano, garlic, olive oil, balsamic vinegar, lemon juice and salt. Drizzle sauce over kebabs.
