Ingredients

  • 2 1/2 tablespoons dry mustard powder
  • 10 tablespoons Pilsner beer
  • 1 tablespoon Worcestershire
  • 3 ounces apple cider vinegar
  • 3 ounces light brown sugar
  • 1/2 teaspoon salt
  • 4 egg yolks
  • Pinch of sugar

Preparation

Step 1

Combine all ingredients in a metal bowl or top of double boiler over simmering water.

Gently whisk mustard, being sure to scrape sides down, until it starts to thicken. Do not whisk furiously, or it will become too frothy and hard to control.

When mustard is thick, pour into shallow pan and reserve to cool. Serve, chilled.
Yield: 3/4 cup
