Spicy Fried Rice

Ingredients

  • 2 Tbsp chicken broth
  • 2 Tbsp white wine
  • 1 Tbsp soy sauce
  • 2 Tsp toasted sesame oil
  • 2 Tbsp canola oil
  • 1/2 cup chopped onions
  • 1 cup sliced mushrooms
  • 1 cup chopped celery1-6 oz can water chestnuts, sliced
  • 1 Tsp garlic powder
  • 1 Tbsp fresh ginger root, chopped
  • 1 Tsp red pepper flakes
  • 4 cups cooked rice
  • 1-8 oz pkg frozen peas and carrots, defrosted

Preparation

Step 1

In a small bowl, stir together broth, wine, soy sauce, and sesame oil.

In a large skillet, heat canola oil over moderately high heat until very hot. Add onions mushrooms, celery, water chestnuts, garlic, ginger root and red pepper flakes. Cook for 3 minutes, then add rice and cook until crispy (about 5 minutes). Add the peas and carrots and cook, stirring for 3 minutes. Add broth mixture, stirring to mix well. Serve

Optional: Can add cooked diced chicken or cooked shrimp to make a complete meal (add just before the rice)
