Ingredients
- 6 cups torn mixed salad greens or romaine lettuce
- 2 medium tomatoes, cut into wedges
- 1 small cucumber, peeled , halved lenghtwise and thinly sliced
- 1 small red onion, cut into thin wedges
- 1/2 cup pitted kalamata olives
- 1/2 cup crumbled feta cheese (about 2 oz)
- 1 recipe Greek Vinaigrette (Recipe in Salad Dressings)
- 2 cups shredded chicken or 20 medium shrimp, cleaned and sautee in oil and garlic ( This is for if you want a main dish serving)
Preparation
Step 1
1. In a salad bowl, combine all ingredients. Add greek Vinagrette, toss to coat. Makes 6 side dish serving
2. Add Chicken or Shrimp when adding ingredients, Add Greek Vinagrette, toss to coat. Makes 4 main dish serving
