Breakfast Hash Brown Casserole

  • 1 bag frozen hash browns - stingy kind
  • 1 8 oz. monterey jack with jalapenos cheese, shredded
  • 1 can evaporated milk
  • 4 eggs
  • 1 lb. ham - sandwich kind - diced up
  • 1 bunch scallions - chopped

Preparation

Step 1

Place hash browns in a 9x13 lightly greased pan.
Mix everything else up in a bowl, and pour over hash browns. Cover and bake for 35-45 minutes. Take cover off and bake 5 more minutes so top is well done. Let sit for 10 minutes.
