Ingredients
- 4 1/2 pounds 3 inch long beef short ribs
- Kosher salt and freshly ground pepper
- 2 cups dry red wine
- 1 14.5 oz can diced tomatoes in juice
- 1 8oz package sliced button mushrooms
- 1/2 cup finely chopped onion
- 6-8 cloves of garlic peeled
- 6 srigs Italian parsley
- 2 bay leaves
Preparation
Step 1
1. Sprinkle ribs with salt and pepper. Place in a even layer in slow cooker. Add next 7 ingredients, cover and cook on low heat until meat is tender, about 8 hours
2. Using slotted spoon, transfer ribs to serving bowl, discard parsley and bay leaves. Remove whatever fat is on the top of sauce and pour sauce over ribs
3. Serve with mashed potatoes or noodles. Makes a great no fuss Sunday meal
