Apple Cake with Lemon Sauce

Ingredients

  • 1 cup flour
  • 1 cup sugar
  • 1/4 c. shortening
  • 1 t. baking soda
  • 1 t. vanilla
  • 1/2 t. cinnamon
  • 1/2 t. salt
  • 1/4 t. nutmeg
  • 1 egg
  • 3 cups coarsely shredded, peeled cooking apples (about 3 large apples)
  • 3.4 c. coarsely chopped walnuts
  • Lemon Sauce (below)

Preparation

Step 1

Preheat oven to 350. Grease an 8” x 8” baking pan. Into lage bowl, measure first 9 ingredients. With mixer at low speed, beat ingredients until just mixed. Add shredded apples; increase speed to medium and beat 2 minutes, occasionally scraping bowl with rubber spatula. Stir in nuts. Pour batter into pan and bake 45 to 50 minutes until top springs back when lightly touched with finger. Serve warm or cold with Lemon Sauce. Makes 8 servings.

LEMON SAUCE: In 2-quart saucepan, mix well ¾ cup sugar, 2 T cornstarch, ¼ t. salt, 1 egg, and 1-1/2 c. water. Cook over medium-low heat, stirring constantly with wire whisk or hand beater until mixture thickens (do not boil). Remove from heat and stir in ¼ cup lemon juice.
