Temptation Fruitcake

This luscious fruitcake makes a wonderful hostess gift. Wrap in colorful plastic wrap and tie with a decorative bow.

Ingredients

  • 2/3 cup firmly packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 4 eggs
  • 1/2 cup fruit juice (grape, orange, apple)
  • 1/4 cup molasses
  • 2 tablespoons brandy
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon mace
  • 1 (16 ounce) package diced fruitcake mix
  • 1 cup slivered almonds
  • 1 cup raisins
  • 1 cup currants

Preparation

Step 1

1. Preheat the oven to 300°F. Grease and flour a 10 or 12 cup Bundt pan.

2. In a large mixing bowl, mix the sugar and butter until light and fluffy. Add the eggs, juice, molasses and brandy; mix well. The mixture may appear curdled. Mix in all of the remaining ingredients. Spoon into the prepared pan.

3. Bake for 1 1/2 hours or until a toothpick inserted into the center of the cake comes out clean. Cool for 10 minutes in the pan. Remove from the pan; cool completely on a rack. To store, wrap tightly with plastic wrap.
