Stuffed Bhindi

Ingredients

  • For stuffing:
  • 250 gms tender bhindi (ladies finger/okra)
  • 3-4 curry leaves
  • 1/4 tsp asafoetida
  • 1/2 tsp cumin seeds
  • 1 tbsp oil
  • 1 1/2 tsp ginger-green chili paste
  • 1/2 tbsp roasted coriander powder
  • 1/2 tbsp white sesame seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp roasted cumin powder
  • 1/4 tsp garam masala powder
  • 3 tbsp fresh coconut grated
  • 3-4 tbsp coriander leaves finely chopped
  • Salt to taste

Preparation

Step 1

1. Mix all ingredients meant for stuffing in a bowl. Keep aside.

2. Wash & pat dry bhindi. Make a slit length wise in each bhindi.

3. Stuff around 1 tsp of stuffing in it. Stuff all bhindi, keep left over
stuffing aside.

4. Heat oil in a vessel. Add cumin seeds, asafoetida, curry leaves & saute
for few seconds.

5. Add stuffed bhindi & spread them around the vessel in a single layer.
Cook on low flame without lid.

6. Every few minutes turn bhindi to allow even cooking on all sides. Slow
roasting of bhindi can take at least 30 mins.

7. Add left over stuffing, mix well & cook for 3-4 mins.

8. Turn off heat. Serve hot.
