Ingredients

  • Sauce:
  • 1 can Black Eyed peas
  • 1 can Black Beans
  • 1 can Pinto beans
  • 1 can Corn
  • 1 small jar Pimento's, diced and drained
  • 1 cup Celery, diced
  • 1 medium Onion, diced
  • 1 Red Pepper, diced
  • 1 Green Pepper, diced
  • 1 cup Sugar
  • 1/2 cup Vegetable Oil
  • 3/4 cup Apple Cider Vinegar
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tbsp. water

Preparation

Step 1

Drain and rinse black eyed peas, beans, and corn. Add all ingredients and toss.

For sauce: bring all ingredients to a boil and turn off the stove. Continuously stir for several minutes. Pour overall ingredients and toss gently. Do not stir. Refrigerate overnight for best results.
