Golden Potato Soup

Ingredients

  • 2 tbs butter
  • 1 tbs olive oil
  • 1 clove garlic, minced
  • 1 lg onion, chopped
  • 2 c. celery, chopped
  • 5 med potatoes, peeled and cut in chunks
  • 6 yellow squash, sliced
  • 1 tsp thyme
  • 1/2 tsp basil
  • 1/4 tsp sage
  • salt & pepper to taste
  • 6-7 cups chicken or vegetable broth
  • 1/2 - 1 c. dry milk powder (opt)

Preparation

Step 1

In heavy soup pot, melt butter and heat oil. Add onion, celery, saute til they began to wilt. Add garlic and saute another minute. Add potatoes, squash, seasons and broth to cover. Bring to boil. Simmer, covered, for 20 minutes or till vegetables are soft.
Puree until smooth. Add powdered milk if using. Reaheat gently, stirring.
