Fruity Colorful Coleslaw

Ingredients

  • 2 cups green cabbage, thinly sliced
  • 2 cups red cabbage, thinly sliced
  • 1/4 cup coarse chopped walnuts
  • 1/4 cup mandarin orange segments
  • 1/4 cup halved seedless grapes
  • 1 cup shredded carrots
  • 1/2 cup low fat mayonnaise
  • 1/2 cup low fat sour cream
  • 2 tablespoons cider vinegar
  • 2 tablespoons sugar
  • 1 whole kohlrabi (optional)
  • Salt, pepper to taste

Preparation

Step 1

Cut cabbage in quarters and de-core. Slice cabbage into very thin shreds and set aside.

Cut carrots and kohlrabi into thin diagonal slices, stack and julienne thin. Set aside.

In large bowl combine mayonnaise and sour cream and mix well. Add vinegar, a dash of sugar, salt and pepper. Add cabbage, carrots,walnuts, orange, grapes and kohlrabi and toss to coat.

Chill and serve.
