  • 1 cup crunchy peanut butter
  • 1/2 cup firmly packed light brown sugar
  • 1/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Strawberry jam

Step 1

Preheat oven to 350. Beat peanut butter, sugars, egg and vanilla at medium speed with an electric mixer until blended. Spoon heaping tablespoonfuls of batter 1 1/2 inches apart on a parchment paper-lined baking sheet. Flatten dough with a fork. Make a 1/2 inch indentation in the center of each cookie using your thumb or the handle of a wooden spoon. (Be sure not to push through the other side). Spoon 1/2 tsp jam into each thumbprint.
Bake 12 to 14 mins or until golden. Cool cookies on a baking sheet 2 mins. Transfer cookies to wire rack; cool completely before serving.
