Fish fillets, oven fried

Great with sole, perch, halibut, and salmon (and probably many more types of fish)

I reduced oregano and added spices to taste, like Italian spice mixture, cumin, coriander, etc.
I reduced bread crumbs by 1/3 or more and added crushed corn flakes.

Cooking times vary due to thickness of fish.

Ingredients

  • 2 tbsp vegetable oil
  • 1 cup bread crumbs
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • Pinch of cayenne
  • Salt and freshly cracked pepper to taste
  • 4 to 5 oz of fish fillets, such as sole, snapper
  • 1/4 cup mayonnaise

Step 1

Preheat oven to 450 F.
Brush non-stick or parchment-lined baking sheet wtih the oil.
Combine the bread crumbs, paprika, oregano, cayenne pepper, salt and pepper in a wide-sided dish. Brush the fish all over with the mayonnaise. Set the fillets the bread crumbs mixture, turning to coat and gently pressing the crumbs on. Set the fish on the baking sheet. Bake 5 minutes, and then carefully flip the fish over. Bake 5-8 minutes more, or until cooked through.
