Meatballs with Creamy Noodles

Ingredients

  • Sauce:
  • 8 oz no-yolk egg noodles
  • 1 lb ground chicken
  • 1/2 cup bread crumbs
  • 1 lg egg, lightly beaten
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 clove garlic, minced
  • 1-1/2 cups sliced mushrooms
  • 1/2 cup chopped yellow onion
  • 1 cup reduced-sodium chicken broth
  • 1 cup nonfat sour cream
  • 1 tsp paprika
  • 2 Tbsp chopped fresh parsley

Step 1

Cook noodles according to pkg directions, but do not add salt. Drain. Keep warm.

Meanwhile, in a medium bowl, combine chicken, bread crumbs, egg, salt, and pepper. Mix well. Shape mixture into 1" meatballs. Spray a large nonstick skillet with vegetable cooking spray. Heat over med heat. Add meatballs. Cook, stirring, until cooked through, about 10 min. Place meatballs on a plate; cover and keep warm.

To prepare sauce, in same skillet, add garlic, mushrooms, and onion. Cook over med heat, stirring, until vegetables are softened, about 5 min. Add broth. Cook, stirring, until thickened, about 5 min. Stir in meatballs, sour cream, and paprika.
