Ingredients

  • 1 lb sausage
  • 1 med onion chopped
  • 2 sweet red peppers chopped
  • 4 ribs celery chopped
  • 2 cans diced tomatoes with juice
  • 1 can tomato soup
  • 1 1/2 tsp red pepper
  • 1 tsp cumin
  • 1 tbsp paprika
  • 2 bay leaves
  • 1 tbsp granulated garlic
  • 1 tsp ground mustard
  • 2 tsp oregano
  • salt and pepper
  • 1 cup water( more if needed)
  • 1 1/2 cups elboroni(dry)
  • grated chedder cheese

Preparation

Step 1

cook sausage, onion,sweet pepper, celery until sausage is no longer pink
add tomatoes, and all the rest of the spices
add tomatoe soup and water
add elboroni and bay leaves
cover and simmer stiring occasionallyuntil elboroni is cooked.(add additional water as needed)
serve hot with grated chedder cheese
