Ingredients
- 4 flounder fillets
- Salt and fresh cracked pepper
- Flour, all-purpose
- 1 egg-beaten
- 1 cup seasoned croutons-crushed
- used panko bread crumbs instead
- 2 tbsp. fresh parsley -chopped
- 1 tbsp. olive oil
- 1 tbsp. butter
Preparation
Step 1
Season fillets with salt and pepper. Dredge in flour and shake off excess. Dip in egg. Mix croutons and parsley together. Coat fish with mixture. In large saute pan over medium heat, add olive oil and butter. Add fish. Brown on both sides until fish flakes ( 2 to 3 minutes on each side).
Other options
Lightly season fish with a jamaican jerk seasoning and saute.
