Buckeye Candy

Ingredients

  • 2 cups creamy peanut butter
  • 1/4 cup (1/2 stick) butter
  • 3 3/4 cups (16oz box) powdered sugar
  • 2 cups (12oz package) semisweet chocolate morsels
  • 2 tbs vegetable shortening

Preparation

Step 1

1. Line baking sheets with waxed paper.

2. Beat peanut butter and butter in alarge mixer bowl until creamy. Beat in powdered sugar until mixture holds together and is moistened.

3. Shape into 1" balls, place on prepared baking sheets. Freeze for 1 hour.

4. Melt morsels and shortening in a medium, microwave safe bowl on high power. for one minute. Stir. Morsels may retain some of their shape. If necessary, microwave additional 10 to 15 second intervals, stirring just until melted.

5. Dip peanut butter centers into melted chocolate using a toothpick, leaving a small portion of center uncovered.

6. Shake off excess chocolate snd scrape bottom of candy on side of bowl. Return to baking sheets; refrigerate until chocolate is set. Store in container in refrigerator.
