Ingredients

  • 3 pounds potatoes, peeled and quartered
  • 1 large onion, chopped
  • 3 tablespoons olive oil
  • 1 cup cracker crumbs
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 egg yolks, beaten

Preparation

Step 1

1. Preheat over to 400 degrees F.
2. Place potatoes in pot, cover with water, bring to a boil over high heat.
3. Reduce to medium heat and cook 12-15 minutes.
4. Drain water, mash potatoes and allow to cool.
5. Coat baking sheet with non-stick cooking spray.
6. Saute onion in olive oil, until tender.
7. Add onion, cracker crumbs, salt and pepper to potatoes and mash mixture together.
8. Roll mixture into balls. Place on sheet.
9. Brush with egg.
10. Bake.
