Italian Cream Cake

Ingredients

  • 1 stick 4 oz. Oleo or Butter
  • 1/2 cup Solid Shortening
  • 2 cups Sugar
  • 5 Egg Yolks
  • 2 cups Flour
  • 1 tsp. Baking Soda
  • 1 cup Buttermilk
  • 1 tsp. Vanilla
  • 1 cup Coconut
  • 1 cup Pecans, chopped
  • 5 beaten Egg Whites

Preparation

Cream shortening will light, Add sugar, Beat well. Add egg yolks, one at a time.

Sift flour and soda together, add alternately with buttermilk. Add beaten egg whites. Pour into 3 greased and lined pans. Bake at 350 degrees for 25-30 minutes, until sides shrink from the pan.

Frost with Cream Cheese Frosting:

8 oz. Cream Cheese
2 oz. Butter or oles
1 tsp vanilla
1 lb. powered sugar
