Ingredients

  • 1 cup sugar
  • 1/2 cup water
  • 1 Tbs cinnamon
  • 1/8 tsp cream of tartar
  • pinch of salt
  • 4 cups pecans or walnuts - not chopped

Preparation

Step 1

Put sugar, water, cinnamon, cream of tartar into a cooking vessel and boil until a "soft ball" is obtained-use a candy thermometer. Turn off the fire and pour into this mixture the nuts. Stir rapidly until all nuts are covered as much as possible with the sugar mixture.

Drop the entire mixture onto wax paper; working rapidly with 2 forks (or fingers) separate the nuts so they will dry properly and not remain in big clusters.
