Ingredients

  • 1 1/2

    chicken breasts (1 whole, and one half breast)

  • 1/2

    tsp onion powder

  • 1/2

    tsp garlic powder

  • 2 1/4

    cups chicken broth

  • 1

    tsp fine grain sea salt

  • 1

    tsp herbs de prov

  • 1

    tsp parsley

  • 3

    sprigs fresh thyme

  • 1/4

    cup heavy cream

  • 2

    tablespoons sour cream

  • 1/4

    cup grated mozzarella

  • 3-4

    tablespoons flour

  • 3

    cups frozen broccoli floretts

  • Topping:

  • 1/3

    cup bread crumbs

  • 3/4

    cup mozzarella cheese

Directions

Preheat oven to 375. Cut chicken breasts into cubes. Put into a small pot with the chicken broth and all the spices and salt. Cook on low until fully cooked and no longer translucent, add the fresh thyme toward the end. Turn off heat, stir in the cheese and heavy cream, add the flour a tablespoon at a time to thicken the sauce a bit, then stir in the sour cream; taste for salt, at this point you can add more if you like. Next, add the broccoli, and toss together. Pour into a baking dish. Top with bread crumbs then sprinkle on the mozzarella cheese topping. Bake in a preheated 375 degree oven for about 12 minutes, on the middle rack. Serve over rice or noodles.
