Ingredients

  • Dumplings:
  • 2 tbsp oil
  • 1 clove garlic, crushed
  • 2 lbs. stewing beef
  • 1/4 cup flour
  • 1/2 tsp salt and pepper
  • 2 onions, chopped
  • 3 cups beef stock, water, or wine, or combo.
  • 1 bay leaf
  • 1/2 tsp thyme
  • 4 chunked potatoes
  • 4 chunked carrots
  • Barley, about 1/4 cup
  • 1 cup thawed frozen peas
  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk

Preparation

Step 1

Cook garlic in oil in heavy bottomed pot for 1 min, then discard garlic.

Salt and pepper beef, then toss in flour and cook in oil, browning all sides. Don't crowd, may need two batches.

Remove beef from pan and add onions. Cook 10 min. then add stock, spices and meat. Boil, then reduce heat, cover and cook 30 min.

Add carrots and potatoes and barley and cook another 30-60 min.

Add peas and dumplings, dropped in large tablespoonsful.
Cover and cook 15 min. until ready.
