Cranberry Apple Bran Muffins

Ingredients

  • 250 ml 1 cup Cereal All-Bran* Original cereal
  • 250 ml or 1 cup skim milk
  • 1 egg
  • 50 ml or 1/4 cup vegetable oil
  • 300 ml or 1 1/4 cup all-purpose flour
  • 150 ml or 2/3 cup granulated sugar
  • 12 ml or 2 1/2 tsp baking powder
  • 1 ml or 1/4 tsp salt
  • 5 ml or 1 tsp ground cinnamon
  • pinch or 1/8 tsp ground nutmeg
  • 175 ml or 3/4 cup chopped fresh or frozen cranberries
  • 125 ml or 1/2 cup peeled and diced apples
  • 15 ml or 1 tbsp granulated sugar
  • 1 ml or 1/4 tsp ground cinnamon

Preparation

Step 1

1. Mix sugar and cinnamon; set aside for topping.

2. In mixing bowl combine cereal and milk; let stand 3 minutes or until most of the moisture is taken up. Add egg and oil; beat well.

3. Stir together flour, sugar, baking powder, salt, cinnamon and nutmeg. Add to cereal mixture, stirring just until combined. Stir in cranberries and apples.

4. Portion batter evenly into greased muffin pan cups. Sprinkle with cinnamon sugar.

4. Bake at 200°C (400°F) 20-25 minutes or until firm to the touch.
