Lemon Pepper Shrimp Scampi

  • 1 1/2 lbs. uncooked shrimp, 26-30
  • 16 oz. orzo pasta
  • 4.25 oz. bottled chopped garlic
  • 1 bunch parsley
  • 1 fresh lemon
  • 1 bundle asparagus

Step 1

Cook orzo according to package directions. Place orzo in medium bowl. Stir in 2 tbsp. chopped parsley and 1/4 tsp. salt. Cover and keep warm.

While orzo cooks, melt 1 tbsp butter in large nonstick skillet over medium-high heat. Sprinkle shrimp with 1/4 tsp. salt. Add half of shrimp to pan; saute 2 minutes or until almost done. Transfer shrimp to plate. Melt 1 tsp butter in pan. Add remaining shrimp to pan; saute 2 minutes or until almost done. Transfer to plate.

Melt 1 tbsp butter in pan. Add 2 tsp. minced garlic to pan; cook 30 seconds, stirring constantly. Stir in shrimp, 2 tbsp. lemon juice and 1/4 tsp. pepper; cook 1 minute until shrimp are done.

Saute or steam asparagus. Serve shrimp over cooked orzo.
