Ingredients
- 4 ripe bananas (add more bananas)
- 1/2 cup brown sugar or 1/2 cup pure maple syrup
- 1/2 cup vegetable oil
- 1 teaspoon cinnamon
- 1 teaspoon cardamom powder
- 3/4 teaspoon salt
- 1 cup whole wheat flour
- 1 1/2 cups white flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- Optional
- Add 1/4 cup wheat germ
- More Bananas
- Add 1 cup carob chips or dark chocolate chips
Preparation
Step 1
1 Preheat oven to 350°F
2 Grease or place cups in tin for 12 muffins.
3 Mash bananas
4 Add oil, sugar or maple syrup, salt, cinnamon and cardamon and mix.
5 Add flours, baking powder and baking soda and mix.
6 Spoon into muffin tins and bake for 20-25 minutes until muffins are done and slightly browned on top.
Watch cooking time. May only take 15-18 minutes
