Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into pcs
  • 1 can corn with sweet peppers, drained
  • 1 can condensed cream of potato soup
  • 1 4 oz can diced green chili peppers
  • 2 tbsp cilantro
  • 1 envelope taco seasoning mix
  • 3 cups chicken broth
  • 1 8 oz carton sour cream
  • 4 oz cheese spread with jalepeno peppers, cubed

Step 1

In slow cooker, combine chicken, corn, soup, undrained chili peppers, cilantro and taco seasoning mix. Stir in chicken broth. Cover; cook on low for 4-6 hours or on high for 2-3 hours. Stir about 1 cup of the hot soup into sour cream. Stir sour cream mixture and cheese into the mixture in cooker; cover and let stand 5 minutes. Stir with a whisk until combined.
