Ingredients

  • 2 cups chocolate wafer crumbs (about 40)
  • 1/2 cup butter or margarine, melted
  • 1/2 gallon strawberry ice cream, softened
  • 1/2 gallon vanilla ice cream softened
  • 1 1/2 cups heavy cream
  • 7 tbsp. confectioners sugar, divided
  • 4 drops red food coloring
  • 1 tube almond paste
  • 2 drops green food coloring

Preparation

Step 1

In a small bowl combine water, crumbs, and butter or margarine, set aside
line two 9" square baking pans with foil; in freezer 10 min.
remove from freezer
pack strawberry ice cream in one and vanilla ice cream into the other
evenly press wafer crumbs into the surface of ice cream
cover and return to freezer until very firm, at least 6 hours
remove ice cream from freezer; let stand 10 min.
rum spatula carefully around edge of each pan
dip pan into warm water 5-10 seconds
invert vanilla ice cream onto the strawberry
return to freezer until surface is firm
meanwhile, in a mixer bowl beat cream with 5 tbsp. confectioners sugar and green food coloring
process until well mixed
on lightly sugared surface, knead until smooth and pliable, about 5 mins.
roll to a 9" square about 1/8" thick
cut into 1" strips
arrange on cake to form ribbon and bow
return cake to freezer
transfer to refrigerator 20 mins before serving
