Red Skin Potato Salad

Ingredients
- 12 small red skinned potatoes
- 1 small onion; sliced
- 6 strips bacon; chopped
- 2 hard boiled eggs; chopped
- 1/2 cup mayonnaise
- 1 tablespoon dijon mustard
- 1 tablespoon red wine vinegar
- 1/2 teaspoon Sugar
- 1/2 teaspoon Salt
- 1/2 teaspoon fresh ground pepper

Preparation
Step 1
Boil potatoes in jackets until tender; cool and peel. Add onions, bacon,
and eggs.
Combine remaining ingredients and mix into potatoes. Sprinkle with a little
paprika, cover and refrigerate for at least 4 hours.
