Muffins: Healthy Morning Muffins

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup ground flax seed
  • 3/4 cup oat bran
  • 1 1/2 cup brown sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 3/4 cup milk
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 1/2 cup vegetable oil
  • 2 cups shredded carrots
  • 2 apples, shredded
  • 1/2 cup raisins, optional

Preparation

Step 1

Preheat oven to 350°.

Mix flour, flax seed, bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. In a separate bowl, combine milk, eggs, vanilla, and oil. Add to dry ingredients. Fold in carrots, apples, and raisins (if using). Fill prepared muffin cups 2/3 full. Bake 15-20 minutes or until done in center.

Freeze well.
