Ingredients

  • 12 oz tiny new potatoes
  • 2 hard-boiled eggs
  • 2 medium ripe tomatoes, quartered
  • 8 oz green beans, steamed, sliced into 1" pieces
  • 8 oz tuna
  • 1/2 cup finely chopped red onions
  • 1 tsp anchovy paste
  • 1 T olive oil
  • 2 T lemon juice
  • 1 1/2 tsp Dijon
  • Capers or black olives
  • 3-4 basil leaves

Preparation

Step 1

1. In small bowl whisk lemon juice, olice oil, mustard and anchovy paste. Stir in olives, capers, basil and red onions
2. Line plate w/ lettuce leaves, arrange potatoes, tuna, green beans, tomatoes and eggs. Spoon dressing over. Season w/ salt and pepper.
