Carrot Cake/ Jennifer Michel

Ingredients

  • 2 c. flour
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. soda
  • 1/2 c. finely chopped pecans
  • mix dry ingredients together in large bowl. set aside.
  • combine...
  • 3 c. finely grated carrots
  • 1 1/2 c. oil
  • 4 slightly beaten eggs
  • add this mixture to the dry ingredients. mix well. put in greased pan. (either 13x9 or 2 rounds ) bake at 300 degrees. 45 min to an hour. done when firm to touch. let cool completely before frosting.
  • Cream cheese frosting...
  • 8 oz. cream cheese (room temp)
  • 1 lb. powdered sugar (half bag)
  • 4 Tbsp butter
  • 2 tsp vanilla
  • mix well with mixer. spread on cooled cakes. top with 1/2 cup finely chopped pecans. extra frosting can be refrigerated, but set it out for awhile to soften up.
