Beets and Carrots

  • 1 lb beets, trimmed
  • 6 carrots. peeled & sliced into large chunks
  • olive oil

Preparation

Step 1

Wrap each beet in foil. Bake in preheated 425 F (220 C) oven for 1 hour.

Remove beets from oven and cool, leaving them in foil.

In large shallow baking dish, add carrots. Drizzle with oil, tossing to coat. Bake for 30 minutes.

Unwrap beets, remove and discard skins. Cut each beet into 8 wedges. Add to carrots. Bake for 15 minutes or until beets and carrots are tender.

Serves: 6
