Mom's (Agnes) recipe

Ingredients

  • Small rack of ribs
  • 6 - 8 beets with stems left on
  • 1/4 lb green beens
  • 2/3 of very small cabbage
  • 1 carrot
  • 1 small coffee cream
  • 1/2 can tomato soup
  • 2 pieces celery
  • 1/2 cup peas
  • 1 1/2 tablespoons flour

Preparation

Step 1

Boil ribs, skim scum and remove ribs.
Peel and juillianne beats, cut green beans, carrot, celery, cabbage. Add vegetables and simmer 1-2 ours (until vegetables are just cooked). Add tomato soup and cream. Mix 1 1/2 tablespoons of flour with some cream and add to pot to thicken.

May be frozen.
