Cranberry Orange Relish

Ingredients

  • 4 cups (1 pound) fresh cranberries
  • 2 oranges, quartered (seeds removed)
  • 2 cups sugar

Preparation

Step 1

Put cranberries and oranges (including the rind) through the food grinder (coarse blade). Stir in the sugar and chill. Keeps well for weeks if stored in the refrigerator.

Note: 4 tablespoons Sucaryl liquid may be substituted for sugar, if desired.

Variations:

To 1 cup basic relish add 1/4 cup shredded coconut.

To 1 cup basic relish add 1 tsp lemon juice and 1/2 cup thinly sliced celery.

To 1 cup basic relish add 2 tbsp raisins and 1/4 cup chopped walnuts.

To 1 cup basic relish add 1/4 tsp ginger and 1 tbsp slivered lemon or orange rind.
