Ingredients

  • 1 cup warm water (110 degrees F)
  • 1-1/2 tsps active dry yeast
  • 1/8 cup honey
  • 1-1/2 cups white bread flour
  • 1 Tbsp melted butter/ oil
  • 1/8 cup additional honey
  • 1 tsp salt
  • 1-2 cups whole wheat flour
  • 1 Tbsp additional melted butter

Step 1

In a large bowl, mix 1 cup water, yeast, and first 1/8 cup of honey. Add bread flour; stir to combine. Let set for 30 minutes, or until bubbly.
Mix in remaining butter, honey, and salt; add 1 cup wheat flour. On a floured surface, knead with wheat flour until dough pulls away but is still sticky to touch. Place in a greased bowl, turning once to coat dough surface. Cover and
let rise until doubled.
Punch down dough; place in a greased loaf pan and allow to rise until dough has topped the pan by one inch (about one hour).
Bake at 350 for 25-30 minutes; do not over bake! Lightly brush surface with melted butter to prevent crust from getting hard.

For a darker bread, use a honey/molasses mix.
