Macaroni Salad (Kay Pollard)

Ingredients

  • 1 lb. elbow macaroni
  • 2 Tbsp vegetable oil
  • 1/4 cup diced green peppers
  • 1/4 cup diced celery
  • 2 Tbsp diced red onion
  • 1 tsp celery salt
  • 1 tsp garlic powder
  • 2 Tbsp chopped parsley
  • 3 Tbsp mayonnaise
  • Salt and Pepper to taste

Preparation

Step 1

Cook macaroni in boiling salted water until tender, about 8 minutes. Drain and rinse with cold water. Drain again. Place macaroni in bowl and set aside to cool.

Add vegetable oil to macaroni and toss. Add the rest of the ingredients and mix well. Chill and serve.
