Ingredients
- 1 lb. ground beef (or ground chicken or turkey)
- 1 small onion, diced
- 1 large bell pepper, diced (red, yellow, orange or green)
- 1 can (29 oz.) diced tomatoes
- 1 (10 oz) can tomato sauce
- 1 (14 0z) can beef broth
- 2 cups cooked rice (white or brown)
- 1 tsp. garlic powder
- sea salt & pepper, to taste
- Optional: before serving top with shredded cheddar cheese
Preparation
Step 1
In a large pot, brown and crumble ground beef along with diced green peppers and onion over medium-high heat. When cooked thru drain excess grease.
Add diced tomatoes, beef broth, tomato sauce and stir all well.
Then add seasonings; garlic powder, salt & pepper (to taste).
Cover and let soup simmer on low-medium heat for about 30 minutes to let all the flavors blend. Just before serving add cooked rice.
