SOLE WITH ONIONS, PEPPERS AND TOMATOES

  • 4 sole fillets
  • 1/2 medium onion chopped
  • 1/2 green pepper chopped
  • 1 tomato chopped
  • 4 About 4 tbsp. Butter
  • Salt & pepper to taste

Preparation

Step 1

1. Preheat the oven to 350.
2. Microwave the vegetables on high for 1 minute.
3. Cut 4 pieces of foil large enough to hold a piece of sole and vegetables. Place 1 piece of sole, chopped vegetables, 1 tablespoon of butter and salt & pepper on each piece of foil. Fold over the foil and pinch to form a pocket over the fish. Make sure to turn the ends up so the butter doesn’t run out.
4. Bake at 350 for about 12-15 minutes
5. Place each piece still in the foil onto the dinner plates.

TIP: You can also use flounder or scallops.
