Lentil Soup

This soup is rich in fibre and is especially beneficial for people with cholesterol

Ingredients

  • 1 Tbsp olive oil
  • 2 small onions chopped
  • 2 cloves garlic minced
  • 3 large carrots, peeled and diced
  • 4 celery ribs, diced
  • 1 tsp curry powder
  • a pinch of allspice
  • 1 cup dry red or green lentils
  • 6 cups chicken broth, add more as soup thickens, about 2 boxes in total
  • 1 tbsp. tomato paste
  • 1 to 2 cups of washed spinach leaves
  • salt & pepper

Preparation

Step 1

In a large pot sauté onion and garlic
add celery, carrots, curry powder, broth and tomato paste, bring to a boil.
lower heat and let simmer for 10 minutes
add lentils and cook for another 10 min.
add spinach and simmer for another 5 more min. before serving.
