Lentil Soup

Ingredients
- 1 Tbsp olive oil
- 2 small onions chopped
- 2 cloves garlic minced
- 3 large carrots, peeled and diced
- 4 celery ribs, diced
- 1 tsp curry powder
- a pinch of allspice
- 1 cup dry red or green lentils
- 6 cups chicken broth, add more as soup thickens, about 2 boxes in total
- 1 tbsp. tomato paste
- 1 to 2 cups of washed spinach leaves
- salt & pepper
Preparation
Step 1
In a large pot sauté onion and garlic
add celery, carrots, curry powder, broth and tomato paste, bring to a boil.
lower heat and let simmer for 10 minutes
add lentils and cook for another 10 min.
add spinach and simmer for another 5 more min. before serving.
