Ham Tetrazzini

Ingredients

  • 1 (8 oz.) package spaghetti
  • 3/4 oz. Parmesan cheese, freshly grated
  • 1 (1 lb.) ham slice, cut into small bite-size pieces (2 1/2 cups) or chop ham into 1/2 pieces in the food processor
  • 1 medium onion, sliced
  • 1/4 lb. fresh mushrooms, sliced
  • 1 celery stalk, sliced
  • 6 tablespoons butter
  • 6 tablespoons flour
  • 2 cups chicken broth
  • 1/4 teaspoon pepper
  • 1 cup milk
  • 3 tablespoons sherry

Preparation

Step 1

Preheat oven to 400 degrees.

Break spaghetti into 2-inch pieces and cook according to package directions. Drain and spread the spaghetti over the bottom of a 2-quart casserole dish and set aside.

Melt butter in a large skillet over medium heat. Saute the mushrooms, onion and celery until tender. Stir in flour. Cook and stir over low heat for 2 to 3 minutes. Gradually stir in chicken broth, pepper, milk and sherry. Continue to stir over medium heat until sauce is slightly thickened. Stir in chopped ham. Pour mixture over spaghetti in the casserole dish.

Top the casserole with grated Parmesan. Bake about 20 minutes until bubbly around the edges.
